Chocolate Chip Pumpkin Cookies
Pumpkin and chocolate chips make a great cookie!
  • 2 ½ cups enriched flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. pumpkin pie spice
  • 1 c. softened margarine
  • 1 c. sugar
  • 1 (15 oz.) can pumpkin
  • 2 egg(s)
  • 1 tsp. vanilla
  • 2 c. chocolate chips
  • 1 c. walnuts optional
Preheat oven to 375 degrees. Spray cookie sheet with non-stick spray. Combine flour, baking powder, baking soda, salt and pumpkin pie spice; set aside. In a large bowl, beat margarine and sugar until creamy. Add pumpkin, eggs, and vanilla. Gradually add flour mixture. Stir in chocolate chips and nuts. Drop by tablespoonfuls on cookie sheet. Bake for 18 – 20 minutes or until edges are lightly browned. Remove from sheets and cool.
Yield: 36 cookies
Serving Size: One cookie is a grain/bread serving at snack.
