Clean Sloppy Joes

A sloppy joe recipe with added vegetables and finished with an avocado.
  • 1 1/4 lb. hamburger
  • 2 c. tomato sauce
  • 1/2 c. tomato paste
  • 1/4 c. yellow or dijon mustard
  • 2 Tbsp. vinegar
  • 5 finely chopped dates
  • 1/2 c. shredded carrot(s)
  • 1/2 c. shredded zucchini
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/2 tsp. sea salt
  • 1/4 tsp. pepper
  • 1/2 avocado
In a medium skillet, brown ground beef. Drain and rinse meat. Return to skillet and add tomato sauce, tomato paste, mustard, vinegar, and dates. Mix together and simmer over medium-low heat. Add carrots, zucchini and all seasonings. Stir until well mixed. Mash half of an avocado and fold into sloppy joe mix. Heat and serve. Place 1/2 c. filling on each sandwich.
Yield: 8 servings
Serving Size: 1/2 cup filling is 1.5 oz meat/meat alternate and 1/4 cup vegetable for 3-5 year old at lunch or supper.
