Pumpkin Muffins

 

   Serving Size:
One half muffin is a grain for a 3 - 5 year old.

 

   Yield:
10 muffins

 


 

Ingredients:

1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. milk
1/2 c. canned pumpkin
1/2 c. melted margarine
1 large egg(s)

Directions:
Mix all the ingredients together in a large bowl. Stir just until the flour is moistened. (The batter will be lumpy). Line 10 muffin cups with paper liners. Fill each muffin cup about 2/3 full. Bake at 375 degrees for 18-20 minutes. Remove the muffins from the pan to cool.
