Spinach Cheese Pie

 

   Serving Size:
One piece is 1.5 oz meat/ meat alternate and 1/4 cup vegetable at lunch/supper for a 3-5 year old.

 

   Yield:
12 pieces

 

 

Ingredients:

2 c. cottage cheese
3 egg(s)
6 Tbsp. flour
2 c. shredded Cheddar cheese
1 (10 oz. box) chopped, thawed and drained spinach

Directions:
Squeeze the spinach to remove all liquid. Combine all ingredients and put in a lightly greased baking pan, (a 9x 9 inch square pan) is about right. Bake at 350 degrees for 45 minutes.
