Tex-Mex Turkey Casserole

 

   Serving Size:
One serving (1/4 of recipe) provides 1.5 oz meat/ meat alternate for a 3 - 5 year old at lunch/ supper.

 

   Yield:
4 servings

 


 

Ingredients:

1/2 lb. ground turkey
1/4 c. finely chopped onion
1 cloves finely minced garlic
1/4 c. finely chopped green pepper
1/2 tsp. chili powder
1/2 c. chunky salsa
1/3 c. crushed, no-salt corn chips
1/4 c. shredded cheddar cheese

Directions:
Preheat oven to 350 degrees. Saute turkey, onion, garlic, green pepper and chili powder until turkey is no longer pink. Remove from heat; stir in salsa. Spread mixture into 2 3/4 cup casserole dish; top with corn chips. Bake 10 minutes. Sprinkle with cheese and bake 5 minutes or until cheese melts.
