Herbed Potatoes

 

   Serving Size:
1/4 serving potatoes is 1/4 cup vegetable for a 3-5 year old at lunch/supper.

 

   Yield:
3 cups

 


 

Ingredients:

4 medium russet potato(es)
2 tsp. basil
2 tsp. oregano
1/2 tsp. salt
2 Tbsp. dehydrated onion
4 tsp. margarine
2 tsp. thyme
2 tsp. parsley
1/2 tsp. pepper
1/4 c. grated Parmesan cheese

Directions:
Cut the potatoes into 1 inch spears. Place in a single layer on sprayed foil. Dot with margarine. Crush spices and mix with cheese. Sprinkle over potatoes. Seal foil tightly and set in baking dish. Bake at 400 degrees for 45 minutes or until tender.
