Mexican Lasagna

 

   Serving Size:
One piece is 1.5 oz meat/ meat alternate, 1/4 cup vegetable and 0.5 oz grain for a 3-5 year old at lunch/supper.

 

   Yield:
12 pieces

 


 

Ingredients:

1 lb. lean hamburger
2 (8 oz.) cans tomato sauce
8 oz. ricotta cheese
12 corn tortilla(s)
1 pkg. taco seasoning
1 (16 oz.) can tomato(es)
4 oz. mild green chilies
2 egg(s)
10 oz. shredded Co-Jack cheese

Directions:
Brown ground beef, drain. Add taco seasoning mix, tomatoes, tomato sauce and chilies. Bring to a boil. Reduce heat and simmer 10 minutes. Combine ricotta and eggs. In bottom of 13 x 9 inch pan, spread half of the meat mixture. Top with half of the tortillas, half the egg mixture and half of the Co-Jack cheese. Repeat once more ending with Co-Jack cheese. Bake at 350 degrees for 20-30 minutes. Let stand 10 minutes before cutting into 12 pieces.
