Bean and Beef Burrito

 

   Serving Size:
One burrito is a 1.5 oz meat/ meat alternate and 1 oz grain for a 3 - 5 year old at lunch/supper.

 

   Yield:
12 burritos

 


 

Ingredients:

8 oz. ground beef
2 Tbsp. chopped onion
1 tsp. garlic powder
1/2 tsp. pepper
2 Tbsp. tomato paste
1 c. water
2 1/2 tsp. chili powder
1 1/2 tsp. cumin
1/2 tsp. paprika
1/2 tsp. onion powder
1 (15 oz.) can drained pinto beans
2 c. shredded cheddar cheese
12 flour tortilla(s)

Directions:
Brown ground beef; drain. Add onions, garlic powder, pepper, tomato paste, water and seasonings. Blend well. Simmer for 30 minutes. Combine beans, shredded cheese and meat mixture. Slightly warm tortillas in between paper towels in the microwave. Place 1/3 cup filling onto each tortilla. Fold around filling envelope style. Place folded burritos seam side down on sprayed baking sheet. Bake at 375 degrees for 15 minutes. Sprinkle with additional shredded cheese before serving.
