Gingerbread Quick Bread

 

   Serving Size:
One half slice is a grain serving for a 3-5 year old.

 

   Yield:
16- 1/2 inch slices

 


 

Ingredients:

2 1/4 c. flour
1/3 c. sugar
3/4 c. dark molasses
1/2 c. water
3/4 c. shortening
2 egg(s)
1 tsp. baking soda
1 tsp. ground ginger
1 tsp. ground cinnamon
3/4 tsp. salt

Directions:
Heat oven to 350 degrees. Grease and four 9 x 5 x 3 inch loaf pans. Measure all ingredients into a large mixer bowl. Blend for 30 seconds on low speed, scraping bowl constantly. Beat three minutes on medium speed, scraping bowl occasionally. Pour into pan. Bake 50-60 minutes or until wood pick inserted in center comes out clean. Remove from pan; cool thoroughly before slicing.
