Macaroni and Cheese

 

   Serving Size:
One serving (1/8 of recipe) is 1.5 oz meat/ meat alternate and 1 oz grain for 3-5 year old at lunch/supper

 

   Yield:
8 servings

 


 

Ingredients:

8 oz. (2 cups) dry macaroni
2 c. lowfat milk
1 1/2 Tbsp. cornstarch
3/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. dry mustard
1/4 tsp. paprika
6 oz. (1 1/2 c.) grated, sharp cheddar cheese
6 oz. (1 1/2 c.) grated American cheese

Directions:
Cook macaroni according to package directions. While macaroni is cooking, combine milk and dry ingredients in a jar and shake very well. When macaroni is tender, drain it and return to pan. Add milk mixture and stir gently over medium heat until sauce thickens. Add cheeses, stir until melted and serve.
