Orange Pork and Vegetables

 

   Serving Size:
One serving (1/6 recipe) is 1.5 oz meat/ meat alternate, 1/4 cup vegetable and 0.5 oz grain for a 3 - 5 year old at lunch/supper

 

   Yield:
6 servings

 


 

Ingredients:

3 Tbsp. olive oil
1 lb. pork loin
1 tsp. minced garlic
1 c. pulp free orange juice
1 1/2 Tbsp. light soy sauce
2 Tbsp. flour
2 1/2 c. California medley vegetables
2 c cooked rice

Directions:
Slice pork into 1 inch pieces. Cook the rice according to package directions; set aside. Heat the oil in a large nonstick skillet. Brown the pork and the garlic for about 10 minutes or until tender. Mix the orange juice, soy sauce and flour; add to the skillet along with the mixed vegetables. Bring to a boil and simmer for five minutes or until vegetables are tender. Serve over rice.
