Ham and Egg Quiche

 

   Serving Size:
One slice is a 1.5 oz meat/ meat alternate and 0.5 oz grain for a 3 - 5 year old at lunch/supper.

 

   Yield:
8 slices

 


 

Ingredients:

1 c. flour
1/3 cup + 1 Tbsp. shortening
1/2 tsp. salt
2 - 3 Tbsp. water
4 egg(s)
3/4 tsp. salt
1/8 tsp. cayenne pepper
1 cup (4 oz.) shredded Swiss and Cheddar cheese
2 c. half and half
1/4 tsp. sugar
1 c. diced ham
1/3 c. minced onion

Directions:
To make quiche crust, mix flour and 1/2 tsp. salt in a bowl. Cut in shortening. Sprinkle with water, 1 tablespoon at a time until moistened. Gather dough into a ball. Roll out, place in pie plate; flute edges. Sprinkle ham, onion and cheese on crust. Beat eggs slightly; add half and half and seasoning. Pour in crust. Bake at 425 degrees for 15 minutes, reduce heat to 300 degrees and bake about 45 minutes longer. Let stand 10 minutes. Cut into 8 slices.
