Salmon Loaf

 

   Serving Size:
1 piece is a 1.5 oz meat/ meat alternate for 3-5 year old at lunch/supper.

 

   Yield:
6 servings

 


 

Ingredients:

1 (15 oz.) can salmon
2 c. milk
4 large, well beaten egg(s)
2 Tbsp. margarine
2 c. enriched seasoned bread crumbs
pepper to taste

Directions:
Drain liquid from salmon; remove skin and bones; mash until fine. Heat the margarine and milk until the margarine is melted; add bread crumbs and pepper. Mix the salmon, bread crumb mixture and eggs together. Pack the mixture into a buttered 9x9 inch baking dish. Bake for one hour at 325 degrees. Cut into 9 pieces. Note: may be served with white sauce.
