Chicken Tortilla Bake

 

   Serving Size:
1/12 of bake is 1.5 oz meat/ meat alternate and 0.5 oz grain for 3 - 5 year old at lunch/supper.

 

   Yield:
12 servings

 


 

Ingredients:

12 oz. bag whole grain corn tortilla chips
4 cups cubed, cooked turkey or chicken
1 (10.75 oz.) can cream of chicken soup
1 (7 oz.) can undrained, diced green chilies
1 bunch sliced green onion
2 cups shredded Co-Jack cheese
1 (2.5 oz.) can sliced black olives

Directions:
Place one-half of tortilla chips in the bottom of a medium baking dish. Set aside. In a large bowl, combine chicken, soup, chiles, onions and cheese. Place half of this mixture over the chips, cover with remaining chips and finish with remaining chicken mixture. Bake at 375 degrees F for 20 minutes or until bubbly hot. Top with black olives before serving.
