Cider Stew

 

   Serving Size:
1/11 of stew is 1.5 oz. meat/ meat alternate and 1/4 cup vegetable for a 3 - 5 year old at lunch/supper.

 

   Yield:

Ingredients:

3 Tbsp. flour
2 tsp. salt
1/2 tsp. pepper
1/4 tsp. dried, crushed thyme
2 lbs. beef stew meat
2 Tbsp. cooking oil
2 cups apple cider
2 Tbsp. vinegar
2 cups quartered, carrot(s)
2 cups peeled and cubed, potato(es)
1 cup sliced onion
1 cup sliced celery
1 cup chopped apple(s)
1/2 cup water

Directions:
In mixing bowl, combine flour, salt, pepper, and thyme; toss with meat to coat. In Dutch oven, brown meat in hot oil. Stir in cider, water, and vinegar. Cook and stir; bring to a boil. Reduce heat and simmer covered until meat is tender, about 1 hour. Add vegetables, apple and some additional water if needed. Cook until vegetables are tender, about 30 minutes.
