Cheeseburger Meatloaf

 

   Serving Size:
One slice is a 1.5 oz meat/ meat alternate for a 3 - 5 year old at lunch/supper.

 

   Yield:
10 slices

 


 

Ingredients:

1/2 c ketchup
1 egg(s)
1/2 c. dry bread crumbs
1 tsp. onion powder
11/2 lb. lean hamburger
2 tsp. prepared mustard
2 tsp. dill pickle relish
6 (1/2 oz.) slices cheddar cheese

Directions:
In a bowl combine ketchup, egg, bread crumbs and onion powder. Crumble beef over mixture and mix well. On a large piece of waxed paper, pat beef mixture into a 10 x 6 inch rectangle. Spread remaining ketchup over meat to within 1/2 inch of long sides and 1 1/2 inches of the short side. Top with mustard and relish. Place four cheese slices on top; set aside remaining cheese. Roll up loaf, jelly-roll style, starting with the short side, pulling away waxed paper while rolling. Seal seams and ends well. Place loaf, seam side down, In a greased 11 x 7 x 2 inch baking pan. Bake at 350 degrees for 45 minutes or until meat thermometer reads 160 degrees. Cut reserved cheese slices in half diagonally and place on top of loaf. Return to oven for 5 minutes. Let stand 10 minutes before slicing into 10 pieces.
