Cheesy Fish Sticks

 

   Serving Size:
Two fish sticks is 1.5 oz meat/ meat alternate for a 3 - 5 year old at lunch/supper

 

   Yield:
12 fish sticks

 


 

Ingredients:

1/2 c. corn meal, enriched or whole grain
1/2 c. grated Parmesan cheese
3/4 tsp. garlic powder
1/4 tsp. salt
3 Tbsp. canola oil
1 lb. catfish or any other milk white fish fillets

Directions:
Preheat oven to 475 degrees. Lightly oil or coat a large baking sheet with nonstick cooking spray and set aside. Cut fish into 1 inch strips (12 total). Combine the corn meal, Parmesan cheese, garlic powder, and salt in a medium bowl and mix well. Place the oil in a different small bowl. Lightly coat each piece of fish in the oil and then roll in the breading mixture until well coated. Arrange the fish on the prepared baking sheet and bake until golden brown, 10-12 minutes.
