Porcupine Sliders

 

   Serving Size:
One slider is 1.5 oz meat/ meat alternate and 1 oz grain for a 3 - 5 year old at lunch/supper

 

   Yield:
8 sliders

 


 

Ingredients:

1/2 cup medium grain brown rice
1 Tbsp. vegetable oil
2 Tbsp. minced yellow onion
1 clove minced garlic
1 small stalk minced celery
16 oz. lean ground turkey
2 Tbsp. dried roughly chopped cranberries
3/4 cup chopped, stems removed spinach
2 large egg(s)
1/2 tsp salt
1/2 tsp. black pepper
1 tsp. Worcestershire sauce
1 scant pinch crushed red pepper
8 whole grain mini rolls

Directions:
Follow package instructions for cooking brown rice. When cooked, transfer to a plate and cool completely in refrigerator. Preheat oven to 350 degrees. In a skillet saute onions, celery and garlic in oil until soft, about 5 minutes. Transfer to refrigerator and cool completely. In a large mixing bowl combine all ingredients including cooked rice and cooked onion mixture and mix well. Portion into 8 patties; place onto a parchment lined baking pan. Bake at 350F for 12-18 minutes.. Use a thermometer to check until turkey reaches an internal temperature of 165 degrees F. Serve on mini whole grain rolls.
