Skillet Barbecue Chicken and Rice

 

   Serving Size:
One serving (1/6 of recipe) is 1.5 oz meat/ meat alternate, 1/4 cup vegetable and 1 oz grain for a 3 - 5 year old at lunch/supper.

 

   Yield:
6 servings

 


 

Ingredients:

1 lb. boneless, skinless chicken breast
2 Tbsp. oil
1 cup Kraft barbecue sauce
1 cup water
1 can (11 oz.) drained whole kernel corn
1 chopped small green pepper
2 cups uncooked instant rice

Directions:
Cut chicken into strips, then add to oil and brown on medium-high heat. Stir in barbecue sauce, water, corn and green pepper; bring to boil. Reduce heat; cover and simmer 5 minutes. Stir in rice; cover. Remove from heat. Let stand 5 minutes.
