Yellow Squash Sandwiches

 

   Serving Size:
One snack plate is a 0.5 oz meat/ meat alternate and a grain serving for a 3 - 5 year old at snack.

 

   Yield:
6 servings

 


 

Ingredients:

yellow squash
3 oz cheese, sliced
18 whole grain (Triscuit) crackers

Directions:
Select squash that is about 2" in diameter. Prior cutting the squash, hold it up for the children and ask: What color is it? What shape is it? Pass the squash around and let the children feel the skin.Is it bumpy? Is it smooth? Wash the outside of the crookneck squash. Use a knife to remove any blemishes but do not peel.Cut the squash into 1/4 inch slices. Cut cheese into triangles. Place 3 square whole grain crackers, 2 squash circles and 0.5 oz cheese triangles on each plate. Encourage the children to make sandwiches to eat with the ingredients on their plate.
