Apple-Quinoa Salad

 

   Serving Size:
generous 1/2 cup serving is a (1/4 cup fruit) and a grain serving for a 3 - 5 year old at lunch/supper.

 

   Yield:
12 servings

 


 

Ingredients:

1 c. apple juice
1 c. water
1 c quinoa
1 Tbsp. cinnamon
4 medium apple(s)
1/2 to 1 cup dried cherries or cranberries
2-3 Tbsp. olive oil

Directions:
Rinse quinoa well before starting. Bring the apple juice, water, quinoa and cinnamon to a boil and then simmer for about 15 minutes or until the water/juice is absorbed and the quinoa grain has a light colored ring around the grain. While the quinoa is simmering, cut the apples in small pieces and place in a bowl. (You can use lemon juice to coat the apples so they don't turn brown if you want.). To cool down the quinoa and prevent it from becoming sticky, keep stirring and turning it over with your spoon to cool down the grain after removing from burner. When cool, slowly add the quinoa to the cold apples. Add the cherries or cranberries and enough olive oil so the quinoa doesn't stick together. Refrigerate and eat.
