Apple Turkey Pita Pockets

 

   Serving Size:
1/2 cup of apple and turkey filling in one pita pocket provides 1 oz. meat/meat alternate and one (1/3 cup) serving of fruit/vegetable and 1 grain/bread.

 

   Yield:
25 servings

 


 

Ingredients:

2 1/8 lbs. (about 8 medium) Red Delicious apple(s)
25 oz. cooked turkey
6 oz. chopped celery
12 oz. can of drained, crushed pineapple
3/4 c. low-fat lemon yogurt (less than 3.83 gm sugar per oz)
3/4 c. mayonnaise
1/4 tsp. mustard
1/4 tsp. celery seeds
25 halves of pita pocket(s)
25 oz. shredded lettuce

Directions:
Core and chop unpeeled apples. Combine with turkey, celery, and pineapple. In another bowl, combine yogurt, mayonnaise, mustard and celery seeds. Mix until blended. Mix with apple turkey mixture. Slice open pita bread to form pocket. Place 1/2 c. of shredded lettuce in pocket. Top the lettuce with 1/2 cup of apple and turkey mixture.
Note: Additional meat/meat alternate must be offered to complete meal requirements.
