St. Patrick's Day Mashed Potatoes

 

   Serving Size:
1/4 cup potatoes is a 1/4 cup vegetable for a 3-5 year old at lunch/supper.

 

   Yield:
2 cups

 


 

Ingredients:

1 1/2 cups, lightly packed baby spinach
3/4 lb. peeled and cubed small potato(es)
1 large garlic clove, peeled or 1/2 tsp. minced garlic, optional
1/4 cup finely chopped green onions, optional
1 Tbsp. vegetable oil
Salt and freshly ground black pepper, to taste

Directions:
Finely chop the spinach with a sharp knife or place in a food processor. Set aside. Place potatoes and garlic in saucepan. Add cold water until level is 2 inches above potatoes. Cook over medium-high heat until water boils, then reduce heat and cook until potatoes are tender, 20-25 minutes, depending on the size of cube. Drain potatoes and garlic in colander, then immediately return to hot pot, shaking pot until potatoes look dry. Roughly mash the potatoes with a fork or potato masher. Add spinach, green onions and oil. Mash until potatoes are fluffy and bright green.
