Mexican Pizza

 

   Serving Size:
1 slice is a 1.5 oz meat/ meat alternate, 1/4 cup vegetable and 1 oz grain for a 3 - 5 year old at lunch/supper.

 

   Yield:
12 slices

 


 

Ingredients:

1 large onion
1 (14 oz.) prebaked Italian bread shell crust
1 can (16 oz.) refried beans
2 cups (8 oz.) shredded Cheddar cheese
3 cups shredded lettuce
1 cup (4 oz.) Mexican blend cheese
3/4 cup chopped seeded tomato(es)
1/2 cup coarsely chopped ranch-flavored tortilla chips
2 Tbsp. sliced ripe olives

Directions:
Slice half of the onion and chop the rest; set aside. Place crust on an ungreased 12-inch pizza pan. Spread beans over crust to within 1/2 inch of edges. Top with cheddar cheese and sliced onion. Bake at 450 degrees for 10-12 minutes or until cheese is melted. Top with lettuce, Mexican cheese, chopped onion, tomato, olives and tortilla chips.
