Chicken and Edamame


   Serving Size:
Each serving provides one meat/meat alternate and one grain/bread serving for a 3-5 year old at lunch/supper






4 lb 11 oz dry brown rice
4 cups reduced-sodium teriyaki sauce
5 lb cooked, diced chicken
2 cup + 1 tbsp Edamame
3 1/8 cup diced red pepper
2 cup + 1 tbsp chopped cilantro

Cook brown rice according to package directions, omitting salt. Preheat oven to 350?F. Combine cooked rice, teriyaki sauce and chicken in an oven proof pan. Cover and bake for 25 minutes. Remove from oven, add edamame, red pepper and cilantro. Cover and return to oven to oven for another 20 to 25 minutes or until mixture reaches an internal temperature of 165?F.
