Bob the Builder Squares

 

   Serving Size:
One square is a 1.5 oz. meat/ meat alternate and 1/4 cup vegetable for a 3 - 5 year old at lunch/supper.

 

   Yield:
8 squares

 


 

Ingredients:

1 (16 oz.) package thawed spinach
1 cup flour
1 tsp salt
1 tsp baking powder
3 egg(s)
1 c. milk
2 Tbsp. butter
1 cup finely chopped onion
2 cups (8 oz.) shredded cheese - mozzarella, cheddar, jack, or a blend of cheese

Directions:
Preheat oven to 375 degrees Fahrenheit. Lightly grease a 9x13 inch baking dish. Saute onion and thawed spinach for 3 minutes until wilted. Drain if excess liquid remains. In a large bowl, mix flour, salt, and baking powder. Stir in eggs, milk, and butter. Fold in spinach, onion, and cheese. Transfer mixture to baking dish. Bake in preheated oven for 30-35 minutes. Cool and cut into 8 pieces. Note: The squares may be served warm or cold. Additional seasonings may be added as desired. Fresh spinach can be used instead of the frozen if desired.
