Sweet Potato Fries (Baked)

 

   Serving Size:
1/4 cup fries is 1/4 cup vegetable for a 3-5 year old at lunch/supper.

 

   Yield:
1 1/2 cups

 


 

Ingredients:

16 oz. sweet potato(es)
1 Tbsp. trans fat free melted margarine
1 Tbsp. ground cinnamon
2 Tbsp. brown sugar

Directions:
Poke holes in top of potatoes with a fork. Cook in microwave about 1 minute. Preheat oven to 375 degrees F. Wash sweet potatoes and peel if desired. Cut into sticks. Combine margarine, brown sugar and cinnamon in sealable plastic bag. Add sweet potatoes to bag and shake until coated. Spray baking sheet with non-stick vegetable spray. Spread potatoes onto baking sheet. Bake at 375 degrees F for 45 minutes.
