Tasty Taquitos

 

   Serving Size:
1 taquito is 1 oz grain, 1/4 cup vegetable, and 1.5 oz meat/meat alternate for a 3-5 year old for lunch/supper.

 

   Yield:
6 taquitos

 


 

Ingredients:

1/2 cup salsa
2 cups cooked, finely chopped, boneless, skinless chicken
3/4 fresh, canned or frozen corn
2 Tbsp. green onion
1/4 cup finely chopped green bell pepper
1/4 cup shredded Monterey Jack cheese
3/4 cup black beans
1 tsp. canola oil
1/4 tsp. (or to taste) pepper
6 (8 inch) tortilla(s)

Directions:
Preheat oven to 425 degrees. In medium bowl, combine salsa, chicken, corn, green onion, bell pepper, beans, pepper and cheese. Soften tortillas on stove top or in microwave, and spoon filling onto center of tortilla. Roll up tightly. Place toothpick in center to secure. Place tortillas roll side down on baking sheet, brush with oil. Bake 15 to 20 minutes or until crisp and lightly browned. Serve 1 taquito per child.
