Pop's Potatoes

 

   Serving Size:
1/4 cup potatoes is 1/4 cup vegetable for a 3-5 year old for lunch/supper.

 

   Yield:
1 1/2 cups

 


 

Ingredients:

2 1/2 medium russet potato(es)
1 1/2 Tbsp. olive oil
1/2 Tbsp. pepper
1/2 Tbsp. paprika
3/4 Tbsp. onion powder
1 tsp. parsley

Directions:
Preheat oven to 400 degrees. Scrub potatoes well under cold water. Pat dry. Cut into slices or small chunks. Drizzle oil onto potatoes. Add pepper, paprika, onion powder and parsley. Toss in bowl to coat. Place on pan and bake in oven for about 20 minutes at 400 degrees. Potatoes will be done when they are golden brown. Serve 1/4 cup per serving.
