Farmer's Harvest Chili

 

   Serving Size:
One serving is 1/4 cup vegetable and 1.5 oz meat/meat alternate for a 3-5 year old for lunch/supper.

 

   Yield:
6

 


 

Ingredients:

1/2 cup finely chopped onion
1 1/2 diced carrot(s)
1/2 clove minced garlic
1/2 cup diced green bell pepper
1/2 of a 12 oz. can of corn
2 1/4 cup kidney beans, drained and rinsed
1/2 of a 14.5 oz. can diced tomato(es)
1 can tomato paste

Directions:
Spray large saucepan with non-stick cooking spray. Saute onions for about 3 minutes. Add carrots and garlic. Saute for another 3 minutes. Add rest of ingredients and cook for 30 minutes (until heated thoroughly) on medium heat, uncovered. Stir occasionally.
