Pollack Chowder

 

   Serving Size:
One serving (1/6 of recipe) is 1.5 oz meat alternate and 1/4 cup vegetable for 3 - 5 year old at lunch/ supper.

 

   Yield:
6 servings

 


 

Ingredients:

1 lb. pollack fish fillets
1 cup chopped broccoli
1 cup sliced carrot(s)
1/2 cup diced celery
1 cup half and half
4 cups water
1 cup cubed potato(es)
1/4 cup chopped onion
1-2 Tbsp. flour

Directions:
Cut fish into small pieces. Place water and pollock in a saucepan and simmer. While fish is simmering add celery, onion, carrots, broccoli and potatoes. Season to taste with salt, pepper, beau monde and thyme. Simmer until vegetables are tender. Just before serving, mix a tablespoon or two of flour with a cup of half and half and add to the hot mixture to thicken slightly. Cook and stir until desired consistency is reached.
