Picky Eater Pasta

 

   Serving Size:
1/4 cup pasta and 2/3 cup sauce provides 0.5 oz grain, 1.5 oz meat/meat alternate and 1/4 cup vegetable for a 3-5 year old at lunch/supper

 

   Yield:
4 cups

 


 

Ingredients:

15 oz can crushed tomato(es)
2 Tbsp Italian seasoning
1 Tbsp canola oil
1 cup minced onion
1/2 cup minced green bell pepper
1/2 cup minced celery
1/4 cup shredded carrot(s)
2 tsp black pepper
2 tsp salt
1/4 cup shredded zucchini
1 lb ground turkey
6 oz whole wheat rotini pasta
1/4 cup chopped spinach

Directions:
In a large stock pot add crushed tomatoes and 1 Tbsp of Italian seasoning and bring to a simmer. In a large saut pan heat oil over medium heat. Add onions, bell pepper, celery, carrots and zucchini to pan, season with salt and pepper and remaining Tbsp of Italian seasoning - cook approx. 5 minutes until softened. Add vegetable mixture to simmering tomatoes. In the same pan used to saut vegetables add ground turkey, season with salt and pepper and brown. Once turkey is brown add to the tomato sauce and simmer 5 minutes. While sauce is simmering cook pasta according to the instructions on the box. Strain pasta once cooked and combine with tomato sauce. Serve pasta while warm and garnish with spinach. Enjoy!
