Sunny Fiesta Wrap

 







   Serving Size:
2 wraps provide 1 oz grain and 1/2 cup vegetables ofr a 3-5 year old at breakfast.

 

   Yield:
12 wraps

 


 

Ingredients:

2 tsp vegetable vegetable oil
1 cup chopped yellow onion
1 1/2 15-oz cans (2 cups) drained and rinsed pinto beans
1 1/2 Tbsp minced garlic
1 1/2 tsp ground cumin
1/4 tsp salt
3/4 cup salsa
3/4 cup grated cheddar cheese
6 (8 inch) whole wheat tortilla(s)

Directions:
On medium heat in large saucepan saute onions until tender. Add beans, garlic, cumin, and salt,simmer about 10 minutes. Add salsa and cheese, mix well. Remove from heat. To assemble: lay out the tortillas. Spread 1/2 cup bean mixture down the middle of each tortilla. Roll up and cut in half and serve.
