Q Burgers

 







   Serving Size:
1 burger on a bun provides 1 oz grain and 2 oz meat/ meat alternate for a 3-5 year old at lunch or supper.

 

   Yield:
6 burgers

 


 

Ingredients:

3/4 cup dry quinoa
2 cans (15 oz each) drained and rinsed black beans
1/3 cup shredded carrot(s)
3 scallions/green onion
3 minced garlic cloves
1/3 cup bread crumbs
1 large egg(s)
1 1/2 Tbsp cumin
1/2 tsp salt
3/4 tsp black pepper
1 1/2 Tbsp olive oil
6 (1/2 ounce) slices mozzarella cheese
6 whole wheat hamburger bun(s)

Directions:
Cook the quinoa according to the package directions and set aside. Preheat oven to 350 degrees. Coat a baking sheet with non-stick spray. Lightly mash the black beans and then mix all ingredients together (except buns). Form into 6 patties and bake for 30 minutes until heated through, or spray a skillet with non-stick spray and cook on stove top until heated through and golden brown on the outside. Top with cheese and heat until melted. Serve on buns.
