Fun Fish Nuggets

 







   Serving Size:
3 nuggets provide 1.5 oz meat/ meat alternate for a 3-5 year old at lunch/supper.

 

   Yield:
18 nuggets

 


 

Ingredients:

1/2 cup bread crumbs
1/8 tsp pepper
1/8 tsp paprika
1/4 tsp dried parsley
3 Tbsp parmesan cheese
2 lightly beaten egg(s)
1 lb (cut in to 18 pieces) tilapia, fresh or frozen

Directions:
1. Pre-heat oven at 400 degrees. Line a baking sheet with foil and coat with non-stick cooking spray.
2. In a plastic bag, mix the breadcrumbs, pepper, paprika, dried parsley and cheese.
2. Dip fish pieces into the eggs and place in the bag of bread crumbs. Seal and shake the bag to coat all sides.
5. Place fish on baking sheet and bake until lightly golden and firm to the touch, about 12-15 minutes.
