Balsamic Strawberries with Arugula

 

   Serving Size:
1 cup salad is 1/2 cup vegetable for a 3-5 year old at lunch/supper

 

   Yield:
6 cups salad

 


 

Ingredients:

2 c. sliced strawberries
1 Tbsp. balsamic vinegar
salt and pepper to taste
6 c. chopped arugula
1 Tbsp. olive oil

Directions:
1. Toss the strawberries with the vinegar and black pepper in a large salad bowl and let sit for 10 minutes. 2, Add the arugula, sprinkle with salt, and toss again. Drizzle with olive oil and toss gently one last time. Taste, adjust the seasoning, and serve.
