Turkey Lo Mein

 

   Serving Size:
One serving (1/6 of low mein) is 1.5 oz meat/ meat alternate, 1/4 cup vegetable and 1 oz grain for a 3 - 5 year old at lunch supper.

 

   Yield:
6 servings

 


 

Ingredients:

1 Tbsp. oil
1 lb. uncooked, cut into 1/2 inch strips, turkey breast
1 1/2 c. chicken broth
2 Tbsp. soy sauce
1/4 tsp. ginger
1/8 tsp. garlic powder
1/2 tsp. sugar
1 1/2 c. uncooked broken up vermicelli or angel hair pasta
2 tsp. cornstarch
1 (16 oz.) package (California blend or stir fry) mixed vegetables
2 Tbsp. water

Directions:
In large skillet heat oil over medium-high heat. Add turkey; stir-fry 2 - 3 minutes or until no longer pink. Stir in chicken broth, soy sauce, sugar, ginger, garlic powder and vegetables. Bring to a boil; stir in pasta. Reduce heat; cover. Simmer 5 - 8 minutes or until pasta is tender. In small bowl combine cornstarch and water; blend until smooth. Stir into hot mixture in skillet. Cook 1 minute or until thickened, stirring constantly.
