Spring Ambrosia

 

Ingredients

  • ~ 1 red apple
  • ~ 2 oranges, peeled and sliced
  • ~ 1 (7 oz.) can crushed, drained pineapple
  • ~ 2 cups orange juice
  • ~ 2 cups shredded or flaked coconut


Have the children help to cut the apples and peel the fruit. Arrange each fruit in layers in a clear bowl and sprinkle coconut on top of each layer. Pour orange juice over and chill.

Yield: 8 servings

Serving size: generous 1/4 cup serving is 1/4 cup fruit/vegetable
