
Cinco De Mayo Tacos
May 5th is a day of celebration in Mexico. Celebrate by making tacos for lunch with the children. Talk about Mexico. Look at a map so the children can see where Mexico is. Discuss the different types of food eaten there, the language that is spoken, etc... You may even want to have a pinata for the party.
Brown the ground beef; add seasoning mix following the directions on the package. Have the children help with shredding the cheese and tearing the lettuce. Chop tomatoes. Place each ingredient in a separate bowl. Line up the bowls. Have each child prepare their own taco by moving through the line. Heat if desired. Enjoy! Yield: 8 servings Serving size: one taco is one meat alternate (1.5 oz.), one bread alternate and 1/4 cup serving of fruit or vegetable. Note: an additional serving of fruit or vegetable must be served to complete the meal pattern requirement.
