Pasta Pizza

 

   Serving Size:
One slice is 1 oz grain, 1.5 oz meat/ meat alternate and 1/4 cup vegetable for a 3-5 year old at lunch/supper.

 

   Yield:
8 slices

 


 

Ingredients:

2 c. uncooked, corkscrew macaroni
1/2 c. shredded cheddar cheese
1 lb. ground beef
1 tsp. basil
1 tsp. oregano
1 medium thinly sliced tomato(es)
1 1/2 c. shredded mozzarella cheese
3 beaten egg(s)
1/2 c. milk
1/4 c. finely chopped onion
1 15 oz. can tomato sauce
1/2 tsp. garlic powder
1 sliced green pepper

Directions:
Cook macaroni according to package directions; drain well. Combine eggs and milk; stir in cheddar cheese and onion; mix well. Spread macaroni mixture evenly over a greased 14 inch pizza pan. Bake in 350 degree oven for 25 minutes. In a large skillet, brown ground beef. Drain fat. Stir in tomato sauce, crushed basil and oregano, and garlic powder. Spoon meat mixture over baked macaroni crust. Arrange tomato slices, and pepper rings over mixture. Sprinkle with mozzarella cheese. Bake about 15 minutes more until cheese is bubbly.
