Instant Confetti Colcannon

 

Ingredients:

2 c. water
1 c. milk
3 Tbsp. margarine
2 c. finely chipped green cabbage
1 c. finely shredded carrot(s)
2 2/3 c. instant potato(es)
1/2 tsp. salt
1/4 tsp. pepper

Directions:

Combine water, milk and butter in saucepan. Bring to boil over medium heat. Add cabbage and carrots and reduce heat to low. Simmer 3 - 4 minutes until vegetables are tender. Remove from heat and stir in instant potato with fork until mixture is well blended. Stir in salt and pepper.


Yield: 5 cups
Serving Size: 1/4 cup is 1/4 cup vegetable for a 3-5 year old at lunch/supper.
