Preheat oven to 400 degrees. Coat baking dish with non-stick spray.
Score the inside of each squash half several times with a sharp knife and then place in the baking dish, cut side up. Spread 1/2 tablespoon of butter and sprinkle 1 tablespoon of brown sugar inside each half.
Pour about 1 inch of water into the baking dish so the squash doesn't dry out or burn.
Bake until the squash is very soft and the tops are browned, 55-65 minutes.
Yield: 6 squash halves
Serving Size: 1 squash half provides 1/4 cup vegetable for a 3-5 year old at lunch/supper.
