Three Grain Peanut Bread

 

Ingredients:

1 c. flour
1/2 c. corn meal, enriched or whole grain
1/2 c. sugar
3/4 tsp. salt
1 egg(s)
1/2 c. quick oatmeal
1/2 c. nonfat dry milk powder
1 Tbsp. baking powder
2/3 c. peanut butter
1 1/2 c. water

Directions:

Preheat oven to 325 degrees. Combine dry ingredients in a large bowl. Cut in peanut butter using two knives until mixture is crumbly. In a small bowl, beat egg and water together. Add to dry ingredients and mix well. Spread mixture into a greased loaf pan. Bake at 325 degrees for one hour and ten minutes. Cool for 10 minutes and remove from pan. Cut into 20 slices.


Yield: 20 slices
Serving Size: One slice is one grain serving for a 3-5 year old at breakfast.
