Crockpot Potato Beef Stew

 

Ingredients:

1 1/2 lbs. stew meat
10 small unpeeled red potato(es)
1 lb. small, peeled carrot(s)
2 (10 3/4 oz.) cans cream of onion soup
2 (10 3/4 oz.) cans water
1 large, chopped onion
1/4 env. dried onion soup mix
2 tsp. Kitchen Bouquet
1 tsp dill weed or 1/2 tsp minced garlic optional
8 oz. sliced fresh mushrooms
1 c. peas

Directions:

Mix ingredients except mushrooms and peas in a oven safe pot or crock pot. Follow manufacturer's directions for crock pot or bake in the oven at 225 degrees for 6 hours or more. Add mushrooms and peas 30 minutes before serving.


Yield: 8 servings
Serving Size: One serving (1/8 of stew) is 1.5 oz meat/ meat alternate and 1/2 cup vegetable for a 3 - 5 year old at lunch/ supper.
