Muffin Meatloaf

 

Ingredients:

1 egg(s)
1/2 c. milk
3/4 c. oats
1 lb. lean ground beef
3 Tbsp. chopped onion
1/2 tsp. salt
1/2 c. any variety of grated cheese

Directions:

Preheat oven to 350 degrees. Combine all ingredients and mix well. Spoon mixture into 6 greased muffin cups. Bake for 1 hour, or until 160 degrees in center of loaf. Cool slightly before removing from cups.


Yield: 6 muffins
Serving Size: One muffin is 2 oz. meat/ meat alternate for 6-12 year old at lunch/supper,
