Tuna Melts

 

Ingredients:

1/3 c. chopped celery
3 Tbsp. reduced fat mayonnaise
1 Tbsp. Dijon mustard
2 tsp. lime juice
1/2 tsp. black pepper
2 (6 oz.) cans water pack, drained chunk light tuna
4 toasted English muffins, split
1/2 c. shredded or sliced cheese

Directions:

Combine first 6 ingredients. Spread 3 tablespoons tuna mixture onto each muffin half. Top with 1 tablespoon cheese. Broil 5 minutes until cheese melts.


Yield: 8 open faced melts
Serving Size: One melt is 1.5 oz meat/ meat alternate and 1 oz grain for a 3 - 5 year old at lunch/supper.
