Crispy Apple Coleslaw

 

Ingredients:

2 c. shredded cabbage
1 1/4 cup diced apple(s)
1 (8 oz.) can crushed and drained pineapple
1/2 c. reduced fat mayonnaise

Directions:

Cut and core apples. Mix the cabbage, apples and crushed pineapple with the mayonnaise in large bowl. Refrigerate at least one hour.


Yield: 4 cups
Serving Size: 1/2 cup salad is 1/4 cup vegetable and 1/4 cup fruit for a 3-5 year old at lunch/supper.
