Porcupine Meatballs

 

Ingredients:

1 lb. extra lean ground beef
1/2 c. uncooked white or brown rice
1/4 c. finely chopped onion
1 tsp. minced garlic
1 (8 oz.) can ready to use tomato soup

Directions:

Mix beef, rice, onion and garlic in a large bowl. Form into 6 (egg size) balls and place in a 8 inch square baking pan. Pour the tomato soup over the meatballs. Bake in a 350 degree oven for 1 hour and 15 minutes. Turn the meatballs halfway through cooking.


Yield: 6 meatballs
Serving Size: 1 meatball is 1.5 oz meat/ meat alternate for a 3-5 year old at lunch/dinner.
