Pumpkin Bread

 

Ingredients:

1 c. flour
1 1/2 c. whole wheat flour
1 1/2 tsp. salt
1 tsp. nutmeg
1 c. oil
2/3 c. water
2 tsp. baking soda
1 tsp. cinnamon
1 1/2 c. sugar
1 (16 oz.) can pumpkin
4 egg(s)
1 c. nuts, optional

Directions:

Sift flour, soda, salt cinnamon and nutmeg together. Combine sugar, oil, eggs, water and pumpkin. Blend dry ingredients with flour mixture. Pour into 3 greased and floured 9" x 5" baking pans. Bake at 350 degrees for 1 hour. Cool slightly before removing from pans.


Yield: 3 loaves - 15 slices per loaf
Serving Size: One slice is a grain serving for a 3-5 year old.
