Biscuit Egg Sandwich

 

Ingredients:

6 egg(s)
6 prepared enriched biscuits
6 slices cheese

Directions:

Break eggs into a bowl, scramble with fork. Spray skillet with non-fat cooking spray. Pour eggs into skillet and cook. (You'll have a rectangular piece of cooked egg.) Cut into 6 squares. Turn each to make sure both sides are cooked. Cover each egg square with a slice of cheese, melt. Place egg square between 2 biscuit halves. Serve.


Yield: 6 sandwiches
Serving Size: One biscuit sandwich is 2 oz meat/ meat alternate and 1 oz grain for 3 - 5 year old at lunch/supper.
